Baked Chile Rellenos
1. Preheat oven to 350º

2. Peel and cover bottom of large greased casserole dish with roasted chiles (anchos, poblanos, or green chilis). 

3. Layer chopped raw* onions, corn and cheddar cheese.

4. Separate 6 eggs and whip the whites just until soft peaks form.

5. In a separate bowl, fork the egg yolks together with 2 tablespoons cornmeal, and a quarter teaspoon salt. 

6.With rubber spatula, combine yellows into egg whites, paddling just until mixed.  Pour over the cheese and sprinkle with a dusting of paprika.  Bake at 350º for 35 minutes or until golden brown.  

Sides can include:  sour cream or plain yogurt, and chili sauce, preferably homemade with homegrown tomatoes!
